Three bean "beefy" chili


This chili is absolutely delicious.

It has the full flavor oF any meat packed chili, with none of the guilt. ;)

Yummy, filling and perfect for warm winter vibes! :)

This chili is fully loaded with 3 beans, veggies, "meat" and spice, topped with sour cream and diced red onion for fresh bites.

Portions: 2-4

Prep time: 10 minutes

Cook time: 45ish minutes

Ingredients:

2 tsp olive oil/ grapeseed oil/ avocado oil

1/4 cup yellow onion, small dice

1-2 tsp minced garlic

1-2 Beyond Meat burger patties (they will crumble like ground beef so add as much/ little as you want)

[feel free to use real ground beef here]

1 tablespoon tomato paste

1/3 cup vegetable/ no- chicken stock

1 1/2- 2 cups diced tomatoes (can used canned)

1 1/2 cup Black beans (if canned, rinse first) (If fresh, make sure to prep as needed)

1 1/2 cup Garbanzo beans (if canned, rinse first) (If fresh, make sure to prep as needed)

1 1/2 red kidney beans (if canned, rinse first) (If fresh, make sure to prep as needed)

1-2 tsp dijon mustard

1 tablespoon soy sauce

2 tsp smoked paprika

1 tsp cayenne pepper (omit if you want mild spice)

1 tsp ground mustard

1 tsp coriander

1 tsp oregano

1 tsp cumin

2 tsp harissa chili paste/ seasoning

1/2 cup diced bell peppers

S+P to taste

Garnish:

1+ tsp sour cream

diced red onion/ chives

Step 1: Heat oil in a deep pan or pot for about 1 1/2 minutes on medium high heat

Step 2: Stir onions and garlic into hot oil and mix until onions are soft/ translucent (4-5 mins)

Step 3: Reduce to medium heat, add tomato paste and stir

Step 4: Add "burger patties" and using a spatula, break down until it resembles ground beef, and mix for about 5 minutes

Step 5: Add diced tomatoes, stock and then stir for 2 minutes

Step 6: Add beans, bell peppers and stir

Step 7: Add all the spices, seasonings, harissa, soy sauce, mustard and mix until incorporated

Step 8: Let simmer for 25ish minutes, mixing throughout.

(If it starts to seem dry, add some vegetable stock, water, or my favorite vegetarian no-chicken broth)

Step 9: Adjust the seasoning how you'd like it, more salt, more pepper, more cayenne, etc and give final stirs

Step 10: Serve and garnish with a dollop of sour cream and sprinkle red onions on top
