Breakfast Hash
This delicious breakfast creation consists of crunchy bits, greens and a delicate egg right in the center. It'll fill you up nice and happy for any morning craving!

Serving size: 1 portion
Ingredients:
1/3 cubed yam
5 Brussels sprouts, quartered
1/4 cup cubed firm tofu (or other protein)
1 egg
2 tablespoons dice white onion
2 cloves finely dice garlic
4 tablespoons sesame oil (or whatever oil you have on hand)
1 tsp sesame seeds
Pinch salt & pepper
1 tsp coriander
1 tsp Granulated garlic
1 tsp paprika
1 tbsp green onions
Step 1: place 2 tbsp oil in heated pan
Step 2: add onions and garlic to pan and cook about 3-4 minutes on medium heat
Step 3: Add yams to pan and cook until they start browning on all sides, about 10 minutes
In the meantime:
Preheat oven to 375°F
Prep the tofu:
Cut the amount you want and place it between a pile or towels/ paper towels.
Pat out as much moisture as you can.
Chop tofu into small squares and place in a bowl.
Drizzle oil, salt, pepper, paprika and granulated garlic over tofu and shake/ mix with hands until tofu is coated
Place tofu on a baking sheets and bake until nice and crispy, about 20+ minutes (depending how crispy you want it)
Step 4: add brussel sprouts to pan and cook until they start browning
Step 5: mix in salt, pepper, sesame seeds and coriander (add cayenne for added spice)
Step 6: remove from heat once everything looks cooked (fork test the potatoes if needed to check) and mix in tofu
Step 7: place hash in an oven safe dish and create a well/ crater in the center
Step 8: crack an egg directly into the crater
Step 9: place in oven and bake for 15+ minutes (the longer you bake, the firmer the egg)
Step 10: remove from oven when ready, garnish with green onions, salt , pepper, paprika and enjoy!
