Chocolate Cherry Mousse Parfait


This decadent black forrest mousse parfait is packed with cherry and chocolate goodness. It is an ideal light dessert and is perfectly petite.

Ingredients:

chocolate mousse:

2 egg yolks

1/8 cup sugar

1 1/2 cup heavy cream

4 oz chocolate (chips or bar)

cherry mousse:

2 egg yolks

1/8 cup sugar

1 1/4 cup heavy cream

1/4 cup cherry juice (I recommend using glass jarred cherries here so you can use the cherries themselves as garnish and the juice they're in as the flavoring)

whole cherries (from jar or fresh)

1/8 cup chopped cherries

1/4 cup cherry juice

white chocolate chips

chocolate chips (semi-sweet or dark recommended)

Prep time: 30 mins

Total time: 3+ hours

Now since this recipes has two mousses within it, please pay attention to the header before each set of steps.

Chocolate mousse:

Step 1: Beat egg yolks until smooth

Step 2: Beat sugar into egg yolks until they reach a smooth, creamy consistency

Step 3: Heat 1/2cup of the whipping cream in a sauce pan until just boiling

Step 4: Slowly add 1/2 of the hot whipping cream into the egg yolk mixture, stirring constantly. Then add the yolk infused cream mixture back in the sauce pan with the rest of the hot cream and mix constantly until mixture becomes thicker. (this is done slowly with mixing to make sure the eggs do not cook while being incorporated)

Step 5: Add chocolate into hot mixture and stir until fully integrated and the mixture is a smooth, creamy brown.

Step 6: Cool mixture for a couple hours in refrigerator until completely cooled

Cherry mousse:

Repeat step 1-4 listed above

Step 5: Add cherry juice into hot mixture and stir until fully incorporated

Step 6: Cool mixture for a couple hours in refrigerator until completely cooled

Chocolate mousse:

Step 7: Prepare your serving vessels. Shot glass, bowl, etc. (I used little shot glasses)

Step 8: Beat the remaining whipped cream on high using a stand mixer or with a hand held mixer until firm

Step 9: Gently fold chocolate mixture into whipped cream. Very gently. (Add the chocolate into the bowl of whipped cream. Using a rubber spatula, move chocolate around until fully incorporated)

Step 10: Using a small spoon, spoon out chocolate mousse into the bottom of shot glasses.

Step 11: Place into freezer for 30 minutes

White you wait:

Step 12: Chop up some cherries, very fine

Step 13: Once chocolate mousse is set, remove from freezer

Step 14: Place a very small amount of chopped cherries and cherry juice atop layer of chocolate mousse

Step 15: Place back in freezer for 10 minutes

Step 16: Finish cherry mousse

Cherry Mousse:

Step 17: Whip remaining whipped cream from cherry mousse recipe on high in a stand mixer or with a hand held mixture until firm

Step 18: Gently fold cherry mixture into whipped cream. Very gently. (Add the cherry mixture into the bowl of whipped cream. Using a rubber spatula, move cherry mixture around until fully incorporated)

Step 19: Remove glasses with chocolate mousse from freezer

Step 20 : Using a small spoon, spoon out cherry mousse into the rest of the shot glass, leaving a little room at the very top

Step 21: Place in freezer for 20 minutes, until set

Final steps:

Step 22: Remove from freezer once set (almost solid)

Step 23: Garnish top with a whole cherry, white chocolate chips and dark chocolate chips

Step 24: Pour a little cherry juice on top

Step 25: Enjoy!

Storage: Must be kept in a refrigerator. Stays fresh for 5-7 days.
