Winter Kumquat Slaw


I am a sucker for slaw. It is something that I have almost weekly. But as per my tradition, when I make slaw, I add a little flare to it. Here is a winter, citrus slaw I came up with from the local harvest!

Again, I am utilizing kumquats! A delicious citrus fruit with a tart center and sweet peel. If you are a fan of slaw and tangy snacks, then this winter slaw shall become a quick favorite!

Prep time: 10 minutes

Servings: 1/2

Ingredients:

1/4 Red cabbage, sliced thin

2-3 kumquats, sliced thin

1-2 tablespoons green onions

1-2 shakes coriander

1-2 shakes ground mustard seed

1-2 tablespoon vegenaise or mayo (Use as much or as little as you want)

1 tablespoon oil, sesame or olive oil

1 tablespoon fresh squeezed kumquat juice

salt and lemon pepper, to taste

roasted pepitas/ pumpkin seeds for garnish

Procedure:

Step 1: In a large bowl mix vegenaise, oil, kumquat juice and spices together.

Step 2: Add in red cabbage, green onion, and kumquats

Step 3: Mix everything together

Step 4: Taste and adjust spices to your liking

Step 5: Enjoy!

I made this recipe vegan because I am a huge fan of vegenaise and use in as a mayo replacement for every purpose. It is delicious and healthy and a fantastic alternative. Feel free to use whatever kind of mayo you would like for this recipe. As for the seasonings, add as much as you would like of each. Give them a smell, a little taste and determine how much of each you would like. It's all up to your taste so I hope you make it how you would like and enjoy!
