Glorious Guacamole
Now, if you are like me, you absolutely love anything avocado. And I mean anything. (I even have one tattooed on me!)
Guacamole is something I hold near and dear to my heart. When avocado season rolls around, guacamole becomes almost a weekly tradition. It is a great snack and meal accompaniment and perfect if you have too many, or just the right amount of avocados lying around.

Now, I am a bit more on the lavish side of guacamole. I enjoy mixing a combination of classic goodness with some extra flavors and textures thrown in. Try it out and let me know what you think!
Ingredients:
2 large avocados
1/2 cup diced red/ yellow onion (you can also substitute green onion for a lighter onion flavor)
1/2 cup diced tomatoes
1 tablespoon lemon juice, fresh preferred
1/2 teaspoon granulated garlic
1 teaspoon Chiffonade cilantro (finely, small slices)
1/2 teaspoon salt
1/2 teaspoon pepper
Step 1: Prepare avocado; slice in half from stem around and remove pit
Step 2: Using a spoon, scrape out all the avocado from skin into a bowl
Step 3: With a fork, begin mashing avocado until desired texture (I prefer my guac a bit chunky, but go completely smooth if it's what you like)
Step 4: Add onion, tomatoes, cilantro, lemon juice, garlic and stir gently until incorporated
Step 5: Add Salt and pepper to taste, and adjust seasonings to your liking
Step 6: Final stir
Step 7: Serve, eat, enjoy!
Storage: Avocado and guacamole does not last for very long once cut. To help store for a longer period, add lemon juice. Store in an airtight container for up to 2 days.
