Autumn Turkey Salad

Now that Thanksgiving is over and we have some turkey left-overs, let's make a delicious Autumn Turkey Salad!

This is a recipe that I just adore. It is so light and delicious and very versatile.

You can make it with any ingredients you have, any time of year!

For this version, I am going to highlight my favorite season; Autumn, with some delectable seasonal goodies that pair perfectly and come out oh, so tasty!


Cooked (baked, sauteed, fried, etc) 1/2 turkey breast, julienned or shredded

3/4 cup Mayonnaise (my preference is Follow Your Heart brand soy- free vegenaise for a lighter touch, you can also substitute Greek yogurt here for a healthier option)

2 Tablespoons Mustard, your favorite kind (I use honey mustard)

1 teaspoon olive oil

1/2 cup finely chopped scallions

1/2 cup dried cranberries

1/2 cup diced celery

1 teaspoon fresh dill

1/2-1 teaspoon mustard seed

1/2-1 teaspoon salt

1/2-1 teaspoon pepper

1/2-1 teaspoon ground coriander

This specific recipe uses a very large portion of turkey. Now, there are variances with every turkey that you will find in the markets or farms so adjust these numbers according to the size/ portion of the bird you are working with. Remember what your mama always said? "You can always add more, but you cannot always take away". Definitely take that into consideration as you can add more flavor later into this dish!

Step 1: Combine/ wisk wet ingredients (mayo, mustard, olive oil) together in a large bowl to create mayo sauce

Step 2: Add herbs and seasonings (dill, mustard seed, coriander) to bowl with wet ingredients and mix with spoon until all together

Step 3: Add turkey into sauce and lightly fold in, completely covering the turkey in the sauce

Step 4: Fold in scallions, celery, and dried cranberries

Step 5: Add salt and pepper to taste

Step 6: Using a spoon or a rubber spatula, mix one more time to get all ingredients combined

Step 7: Enjoy!

Storage: In an airtight container in your refrigerator for up to 3-4 days (after turkey was originally cooked)

Serve: By itself as a salad, on crackers or together in a fantastic sandwich!

Here, I paired my autumn turkey salad with some fresh baby spinach on a pretzel roll. What a delicious sandwich it was!
